One of the greatest smells to ever fill a house is apple and cinnamon. One year I got tired of the same desserts every holiday. This recipe came to me via a friend and while I did alter a few small things, it was a big success. It is not too dense and smells divine while it bakes. I’m even thinking of adding a little caramel drizzle with my next slice. The original recipe called for a Bundt pan with all the apples on the bottom with the batter on top but I preferred layering it. Oh that and I didn’t have a bundt pan.
First, fill a mixing bowl halfway with water. You’re going to put your apple slices in this while preparing the rest. It will keep them from turning brown. If you’re like me, you start stressing as soon as that blade hits the skin because the last thing any of us wants is a brown apple. (I stressed the same way over potatoes too until I learn this trick)
I have made this two ways, as a flat sheet cake and as “muffins” although they won’t get round on top because they aren’t muffins, they are cake. I like smaller servings so this size appeals to me. This recipes makes either one large 9 x 11 cake or 18 cake muffins.
Ingredients
- 4 Large Apples, peeled and sliced We recommend a sweet variety, not green
- 4 Large Eggs Room temp if possible
- 1 Cup Oil We used Olive Oil
- 1/2 Cup Tangerine or Orange Juice
- 2 Tbsp Melted Butter
- 2 tsp Ground Cinnamon
- 2 Cups Sugar
- 4 tsp Sugar
- 3 Cups All Purpose Flour
- 3 tsp Baking Soda
- 1 tsp salt
- Powdered Sugar For Garnish

Preheat your oven to 350 degrees

Fill a medium size bowl halfway with water. As you peel and slice your apples, you can put the slices in here, it will keep them from getting brown.

In another bowl mix or sift together the flour, baking powder, salt and sugar.

In a separate bowl whisk the eggs with the tangerine/orange juice and oil. Just a light whisk, don't get crazy.

Add the wet ingredients to the flour mixture and stir until things are just incorporated. It will be a thick mixture. Set aside while you finish the apples.

Strain your apples, discarding the water. Coat well with melted butter, then sugar, then cinnamon.

Prepare either a 9 x 11 pan or muffin pan with butter/flour or non stick spray. You want to begin layering with a think coating of batter, then apple, then batter.. etc. The batter will not pour so you just need to spoon it on.

Bake according to what you made. A 9 x 11 cake will need to bake for at least an hour, possibly a bit more. About 35 minutes into baking, loosely place a piece of foil on top to keep from browning too much. Muffins will take approximately 25 minutes to cook.

Let cool completely, sprinkle with powdered sugar to serve.
