Even if you don’t think you like salad, I have a few up my sleeve that might make a believer out of you. If you had told me when I was younger that I would not only WILLINGLY eat beets, but truly enjoy them I would have told you … well it doesn’t really matter what I would have told you. The fact is I do love them and it’s not because of anything that happened in my childhood. I didn’t even know what a beet was until I was well into my 30’s. Goat cheese is another thing I learned to appreciate in recent years.
Although I have put a “recipe” here, it’s not rocket science. Start off with just a few slices of beets and if you don’t like pecans, use walnuts. Try Feta if you are skeptical of goat cheese. Don’t forget some fresh cracked pepper and I would start off using a simple balsamic dressing although I have used apple, honey mustard and Italian. Balsamic is the best though.
